The SAOR Method #2: Marathon des Sables, Business & Starting Over at 30

There comes a point in life where staying comfortable becomes harder than taking the risk.

For Vinny Coffey, that moment came while working corporate jobs abroad in Barcelona. On paper, life looked good — a steady career, great weather, and security. But underneath it all, he knew something wasn’t right.

In Episode #2 of The SAOR Method, Vinny shares the story of leaving the corporate world behind, returning home to Ireland, and eventually building his own coaching business — Phoenix Strength & Conditioning.

But that’s only part of the story.

Over the last year, Vinny also completed one of the toughest endurance events on earth: the Marathon des Sables — a 250KM ultra marathon across the Sahara Desert.

    Finding Purpose Through Challenge

Like many people, fitness originally started as an escape.

While living in Barcelona, Vinny discovered trail running in the mountains surrounding the city. What began as a way to clear his head after work slowly turned into a passion. The challenge, the solitude, and the process of improving over time gave him something he wasn’t getting from corporate life.

That passion eventually led him down a path few people would ever willingly choose — preparing to run across the Sahara Desert carrying his own gear in extreme heat for six straight days.

    The Marathon des Sables Experience

The Marathon des Sables isn’t just a race. It’s a test of resilience, preparation, and mindset.

Over six days, competitors cover approximately 250KM through the Sahara Desert, battling exhaustion, heat, sleep deprivation, and the mental challenge of continuing when every part of you wants to stop.

Vinny prepared for the event alongside endurance athlete Damian Brown and the Ironmind team, where the focus wasn’t simply fitness — it was learning how to suffer, adapt, and stay composed under pressure.

One of the biggest lessons from the experience?
    Resilience is built over time.

Not in six weeks. Not through shortcuts. But through consistent effort, uncomfortable moments, and repeatedly proving to yourself that you’re capable of more.

    Leaving Security Behind

One of the most powerful parts of the conversation was Vinny’s honesty around changing careers in his late twenties.

Walking away from a secure salary and starting again wasn’t easy. There were doubts, uncertainty, and difficult periods trying to figure things out. But the alternative — staying stuck in a career that made him unhappy — was worse.

That leap eventually led to the creation of Phoenix Strength & Conditioning, a coaching business focused on long-term health, resilience, and sustainable progress rather than quick fixes.

It’s a philosophy that mirrors how Vinny approaches life itself:
Start small, stay consistent, and build over time.

    More Than Just Fitness

Throughout the challenge, Vinny also raised over €13,000 for a young boy named Dara, who is currently undergoing cancer treatment.

It added another layer of purpose to an already life-changing experience and became a reminder that challenges can be used for something bigger than ourselves.
